Equipment: None - just a bowl

Ingredients

  • 250 g cooked prawns (shrimp)
  • 1 avocado, diced
  • ½ cucumber, diced
  • 100 g cherry tomatoes
  • Salad leaves
  • 3 tbsp mayonnaise, 1 tsp tomato purée (tomato paste), lemon (dressing)
  • Pinch of paprika

Method

  1. Whisk the mayonnaise, tomato purée, lemon juice and paprika into a quick Marie Rose dressing — no ketchup needed, so no sugar.
  2. Pat the prawns dry and toss them in a little of the dressing.
  3. Pile the leaves, cucumber and tomatoes into bowls and add the avocado.
  4. Top with the dressed prawns.
  5. Drizzle with the remaining dressing, dust with paprika and season with black pepper.

Swaps and tips

A pinch of paprika and a squeeze of lemon make a quick, sugar-free ‘Marie Rose’. Defrost frozen prawns and pat dry.
