Lemon-oregano chicken over a Greek salad.
plus marinating
Equipment: Grill or griddle; skewers
Measures and names
Ingredients
- 2 chicken breasts, cubed
- Lemon, oregano, garlic and olive oil (marinade)
- Cucumber, tomato, red onion and olives
- 100 g feta, in chunks
- Tzatziki, to serve
- Salad leaves
- Skewers
Method
- Mix lemon juice, dried oregano, crushed garlic, olive oil and seasoning. Coat the chicken and marinate for at least 20 minutes.
- Thread onto skewers and grill or griddle for 10–12 minutes, turning, until charred and cooked through.
- Meanwhile, build a Greek salad: chunky cucumber, tomato, red onion and olives, topped with the feta.
- Rest the skewers for a couple of minutes.
- Serve the skewers over the salad with a spoonful of tzatziki. Season with black pepper only — feta and olives salt it.
Swaps and tips
Serve with cauliflower ‘rice’ or extra salad instead of pitta. The marinade also works on lamb or prawns.
