Equipment: Large frying pan

Ingredients

  • 400 g chestnut mushrooms (cremini mushrooms), quartered
  • 2 tbsp olive oil
  • 4 garlic cloves, thinly sliced
  • 1 pinch chilli flakes (red pepper flakes)
  • 1/2 lemon, juice only
  • 2 tbsp flat-leaf parsley, chopped
  • Salt and black pepper

Method

  1. Heat the olive oil in a large frying pan over a high heat. Add the mushrooms and fry for 5-6 minutes, stirring occasionally, until golden and any liquid has evaporated.
  2. Turn the heat down to medium, add the garlic and chilli flakes and cook for 1-2 minutes until the garlic is fragrant and just turning golden.
  3. Squeeze in the lemon juice, season with salt and pepper and toss through the parsley. Serve straight away while sizzling.

Swaps and tips

Don't crowd the pan or the mushrooms will steam rather than brown; cook in two batches if needed. A splash of dry sherry instead of lemon is the classic finish.

Easy variations

  • Add a pinch of smoked paprika with the garlic
  • Use a mix of chestnut and wild mushrooms
  • Finish with a knob of butter
  • Swap parsley for fresh thyme
