Salmon baked in a parcel with herbs — France.
Equipment: Baking paper or foil; baking tray
Measures and names
Ingredients
- 2 salmon fillets
- 1 courgette (zucchini)
- 1 leek, thinly sliced
- 20 g butter
- ½ lemon, sliced
- Sprigs of dill or tarragon
- 1 garlic clove, sliced
- Salt and black pepper
- Green salad, to serve
Method
- Heat the oven to 200°C (fan 180°C). Cut two large squares of baking paper.
- Pile the sliced leek and courgette in the centre of each, and sit a salmon fillet on top.
- Top each with butter, lemon slices, garlic, herbs and seasoning.
- Fold and crimp the paper edges tightly into sealed parcels and place on a tray.
- Bake for 15 minutes — the parcels will puff and the salmon steam in its own juices.
- Open at the table (mind the steam) and serve with a green salad.
Swaps and tips
The parcel steams the fish and vegetables in their own juices — no added fat needed beyond the butter. Foil works if you have no paper.
