Butter beans in a smoky tomato sauce with spinach, baked with eggs and cheese on top.
Equipment: Ovenproof frying pan or small baking dish
Measures and names
Ingredients
- 1 400 g tin of butter beans (lima beans), drained
- 1 400 g tin of chopped tomatoes
- 1 tbsp oil
- 1 onion, chopped
- 1 tsp smoked paprika
- 100 g spinach
- 4 eggs
- 40 g cheddar, grated
- Salt and black pepper
Method
- Heat the oven to 200°C (fan 180°C). Soften the onion in the oil in an ovenproof frying pan for 5 minutes, then stir in the paprika.
- Add the tomatoes and beans and simmer for 8 minutes. Stir in the spinach until it wilts, and season.
- Make 4 wells, crack in the eggs, scatter the cheese around them and bake for 8-10 minutes until the whites are set.
Swaps and tips
Take it out while the yolks still wobble; they keep cooking in the hot sauce. No ovenproof pan? Cover the frying pan with a lid on the hob instead.
Easy variations
- Use cannellini beans or chickpeas
- Add chopped bacon or chorizo for a meaty version
- Swap the cheddar for feta
- Use kale instead of spinach
