Equipment: Large frying pan

Ingredients

  • 800 g beef sirloin or rump, sliced thinly
  • 5 tbsp soy sauce
  • 5 tbsp calamansi or lemon juice
  • 6 garlic cloves, crushed
  • 1 tsp black pepper, coarsely ground
  • 3 onions, cut into thick rings
  • 2 tbsp oil
  • 200 ml beef stock or water

Method

  1. Mix the beef with the soy sauce, calamansi juice, garlic and pepper. Leave to marinate for 30 minutes.
  2. Heat 1 tbsp oil in a large pan and fry the onion rings for 4 to 5 minutes, until soft and lightly golden. Lift out and set aside.
  3. Drain the beef, keeping the marinade. Sear the beef in the remaining oil over a high heat, in batches, for about 1 minute each side.
  4. Return all the beef to the pan with the reserved marinade and stock. Simmer gently for 12 to 15 minutes, until tender.
  5. Return the onions to the pan, warm through for 2 minutes, and serve.

Swaps and tips

Slicing the beef thinly across the grain keeps it tender. Use tamari instead of soy sauce for a gluten free version. Braising steak also works if you simmer it for longer.

Add carbs for the family (optional)

For the family, serve with steamed rice to soak up the sauce. The on-plan plate works well with cauliflower rice or buttered greens.
