Ingredients
- 250 g beef fillet, very fresh
- Large handful of rocket (arugula)
- 40 g parmesan, shaved
- 2 tbsp capers
- 3 tbsp extra-virgin olive oil and lemon
- Flaky salt and black pepper
Optional extras
- Mustard
Method
- Wrap the beef fillet tightly in cling film and freeze for 30 minutes to firm it up.
- With your sharpest knife, slice the beef as thinly as you possibly can and arrange in a single layer over two chilled plates.
- Scatter with the rocket, parmesan shavings and capers.
- Whisk the olive oil with a squeeze of lemon (and a little mustard if you like) and drizzle over everything.
- Finish with flaky salt and plenty of black pepper, and serve immediately while cold.
Swaps and tips
Use the freshest beef fillet from a trusted source, as it’s served raw. Freezing briefly makes it easier to slice paper-thin.
